In deepest rural Ireland, on the edge of a lake in Drumshanbo, Co Leitrim, is home of The Shed Distillery and PJ Rigney. PJ created The Shed Distillery with its medieval copper pot stills and began a quest to fuse oriental botanicals with the local Irish ones. As it turned out, they got on very well indeed. Micro-distilled in small batch copper-pot stills, Empress 1908 is hand-crafted using eight signature botanicals: tea, juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, and butterfly pea blossom. It's the pea blossom, which we discovered in one of the Empress tea blends, that imbues the gin with a distinctive earthy note. The distinct flavour and colour of Empress 1908 comes from the infusion of tea botanicals. No artificial colours or stabilisers are used in its creation - so while the flavour will last forever, its unique indigo hue will not. Fords Gin is a collaboration between 8th generation Master Distiller Charles Maxwell of Thames Distillers and Simon Ford of The 86 Company. A modern take on a classic London Dry Gin, Fords starts with a traditional base of juniper and coriander seed and is balanced by citrus, florals and spices that are steeped for 15 hours before being distilled. Each botanical blends together to create the perfect, versatile base for any gin-inspired cocktail.

In 2015 Four Pillars combined their Rare Dry Gin with some of the best Shiraz grapes in Australia to create the Bloody Shiraz Gin for the first time. And now each year they steep Yarra Valley Shiraz grapes in gin, and after eight weeks they press the fruit before blending with more Rare Dry Gin.

A new and permanent member of the Four Pillars family, Fresh Yuzu Gin offers amazing aromatics that are a mix of lemon, mandarin, cumquat and grapefruit. The palate also features ginger, turmeric and sencha genmaicha, a Japanese green tea with roasted brown rice, for depth of flavour.

Similar in style to the Rare Dry Gin but with the addition of three fresh botanicals: turmeric to add weight and earthiness, ginger for spice and zesty native finger limes.

The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. Four Pillars have used olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. This gin is savoury, textural and bright. Perfect for any Martini - Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired Gin & tonic, with rosemary and lemon!

Spiced Negroni Gin is made specifically for the Negroni, to cut through Campari and vermouth. It is a highly aromatic, rich and spicy gin with great power and intensity. Four Pillars use spices like Tasmanian pepperberry leaf, cinnamon, West African spice Grains of Paradise and Indonesian cubeb to up the flavour. Plus they add fresh ginger to the botanical basket to help lift the spice, and they opened up the plates in the still to add weight and intensity.
